Jaunty's hockey stick in New York should not surprise anyone paying attention.

This was never about luck or timing. It was about surviving long enough to learn.

That quote stuck with me, and it's exactly what I asked Nicolas Guarino about.

Did doubt creep in? Did loved ones try and talk you out of it?

Because even with the best product in the world, if the market isn't ready or open, it's nearly impossible to succeed. And as time goes on, you start looking for a signal.

Any sign of confidence.

That this is actually the path up the mountain.

That's the beauty and the horror of entrepreneurship. You truly have no idea.

Except for one thing. The only sure way to fail is to give up.

New York made that reality unavoidable.

One store open. Limited capital. Supplier pressure.

New York punished assumptions fast. Every shortcut got exposed.

Jaunty adapted by doing the opposite of what early markets tempt founders to do.

They narrowed focus. They obsessed over quality. They treated consistency as non-negotiable, not a brand slogan.

There is no playbook for New York. The market keeps changing shape. Each phase forces another shed of skin.

What looks like momentum now is really accumulated lessons.

Product market fit earned the hard way.

Then scaled carefully under supply and demand constraints that break most teams.
